Spicy Sultana Muffins


Sunday Breakfasts will never be the same again, once you have tried these delicious Muffins.

Quick and Easy preparation and short baking time make these a winner..

 

Preheat the oven to 190 degree C/375 F/Gas 5

Grease a 6 Muffin Baking Tin.

 

Ingredients

Makes 6 

75g/6 tbsp. butter or Low Fat Spread

1 small egg

120ml /1/2 cup unsweetened coconut milk

150g/1¼ cup whole meal flour

7.5ml/1.5 tsp baking powder

5ml/I tsp ground cinnamon

5ml/1 tsp ground ginger.

2ml/1/4 tsp All spice

1 level tsp Advantage Sweetener

50g/1/2 cup Advantage Solsulin Fibre (Optional)

115g/2/3 cup sultanas.

 

Method

Cream the Butter/ margarine with the coconut milk, Advantage Sweetener, Advantage Solsulin Fibre and Egg.

Sift all Dry ingredients together.

Add Sultanas to dry mixture

Add to Wet mixture and mix well.

Divide equally amongst the tins.

 

Bake for 20 mins or until the muffins have risen and are firm to the touch.

Turn out and Cool slightly on a wire Rack before serving.
